Italian Baked Eggs

Good morning LOVElies! Breakfast is the most important meal of the day. Here’s my quick and easy breakfast this morning: Italian baked eggs.

What you need:

  • 3 eggs
  • 1/4 marinara sauce
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons of grated Parmesan and garlic
  • Crushed red pepper flakes
  • Salt and pepper to taste
  • Cilantro

What to do:

Preheat oven to 425. Spray ramekins with nonstivk spray. Evenly distribute marinara in each ramekin.

Top with eggs and everything else. Place in the oven for about 10 minutes. Remove and dress with cilantro. This recipe was inspired by DamnDelicious… Mmm YUM!

Good Morning LOVElies! There is at least a foot of snow outside and I’m HAPPY. So… emojiClap along if you feel like happiness is the truth. Because I’m happy… Clap along if you know what happiness is to you. Because I’m happy…emoji Haha my silliness is getting out of hand. I’m working remotely from home and I decided to make a quick breakfast for the family.

Want a simple & cute halloween idea? All you need is Power Brownies from @paleobakehouse, bananas OR milano cookies, and dark chocolate melts.

Crumble up the paleo brownies, cut banana slices, and melt the chocolates. On the banana or milano cookies, write the word R.I.P. on them, place the crumbled brownies in front. Take a picture and enjoy Have a safe and wonderful Halloween

Well, maybe it’s more like afternoon  haha It’s gorgeous today! The farmer’s market in Reston was lively today. I fell upon an amazing product and I will share to you more about it after I do more research.

Anyhow, yesterday’s Paleo pancakes were so delish, I’ve decided to make more today. Talk about lots of proteins in the morning… Mmmm YUM!!! These fluffy homemade Paleo pancakes were packed with yummiliciousNeSs of bananas and cranberries! I also topped it with an egg and crispy bacon bits… YUM!!! Want the recipe? This deliciously creamy nutty banana green smoothie recipe is just what you need! Mmmm YUM!

  • 1 banana
  • 2 tbs all natural creamy peanut butter
  • 1/2 cup strawberries
  • 2 BIG handfuls of spinach
  • Unsweetened almond milk (add a little or a lot depending on desired consistency)
  • Sprinkled with pistachio

Hello LOVElies!!! Also for dinner: guacamole bruschetta… Mmm YUM!!!

GUACAMOLE BRUSCHETT

A yield: 12-15 SERVINGS prep time: 15 MIN cook time: 6 MIN

INGREDIENTS:

  • ½ loaf French bread
  • 1 clove garlic
  • 2 Tablespoons olive oil
  • 2 tomatoes, medium chopped
  • 2 avocados, medium chopped
  • 1/3 cup finely chopped onion
  • ¼ cup chopped cilantro
  • 2 Tablespoons freshly squeezed lime juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper

DIRECTIONS:

Preheat the oven to 400ºF. Slice the French bread on the diagonal into ½” rounds and place on a baking sheet. Toast the sliced bread in the oven for 3 minutes, then flip each piece over and toast an additional 3 minutes.

Remove the toasted bread from the oven and immediately rub with the clove of garlic (it works best to first cut a small tip off the garlic clove so that the oils will seep out).

Brush the tops of the garlic-rubbed toasts with olive oil and set aside.In a large bowl, combine the chopped tomatoes, avocado, onion, cilantro, lime juice, salt and pepper. Mix together gently making sure the avocado is well coated in the lime juice.

Spoon a portion of the mixture onto each of the garlic toasts and serve. Thanks Kelly Senyei from JustATaste for this recipe
