Parfait Tuesday

 

Good morning LOVElies!!! Happy #ParfaitTuesday with my chicka, Kia@kiasfitfarekff! I hope you’re ready to show off your creativity with yummilicious parfaits!

For breakfast this morning, I wanted something with lots of flavors and yet still good for my body!

This parfait is filled with a combination of chunky fresh strawberries, topped with yogurt, tropical trail mix, raspberries and blueberries. Mmmm YUM! What’s your breakfast looking like? Tag me!

Here’s a simple Mango- Raspberry smoothie recipe for you. All you need is greek yogurt, organic fresh fruits and unsweetened almond milk… Mmm YUM!!!

Here’s the recipe:

  • 1/2 cup of mango
  • 1/2 cup of raspberries
  • 1/2 fage yogurt
  • Unsweetened Almond Milk (add a little or a lot, depending on how “loose” you like your smoothie to be )

Blend mango, yogurt, and unsweetened almond milk in a blender; set aside.
Blend raspberries, yogurt, and unsweetened almond milk in a blender; set aside.
Pour both blends into one cup at one time. Top with fresh fruits and Enjoy!

Are you hungry yet? Well… my friend, Jason @cooktraineatrace, suggested that I should do a plant-based dish tonight. I was so excited he suggested a #plantbased dish because I love tofu.

Good Morning LOVElies!!!

Well, maybe it’s more like afternoon  haha It’s gorgeous today! The farmer’s market in Reston was lively today. I fell upon an amazing product and I will share to you more about it after I do more research.

Anyhow, yesterday’s Paleo pancakes were so delish, I’ve decided to make more today. Talk about lots of proteins in the morning… Mmmm YUM!!! These fluffy homemade Paleo pancakes were packed with yummiliciousNeSs of bananas and cranberries! I also topped it with an egg and crispy bacon bits… YUM!!! Want the recipe? Hello LOVElies!!! Also for dinner: guacamole bruschetta… Mmm YUM!!!

GUACAMOLE BRUSCHETT

A yield: 12-15 SERVINGS prep time: 15 MIN cook time: 6 MIN

INGREDIENTS:

  • ½ loaf French bread
  • 1 clove garlic
  • 2 Tablespoons olive oil
  • 2 tomatoes, medium chopped
  • 2 avocados, medium chopped
  • 1/3 cup finely chopped onion
  • ¼ cup chopped cilantro
  • 2 Tablespoons freshly squeezed lime juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper

DIRECTIONS:

Preheat the oven to 400ºF. Slice the French bread on the diagonal into ½” rounds and place on a baking sheet. Toast the sliced bread in the oven for 3 minutes, then flip each piece over and toast an additional 3 minutes.

Remove the toasted bread from the oven and immediately rub with the clove of garlic (it works best to first cut a small tip off the garlic clove so that the oils will seep out).

Brush the tops of the garlic-rubbed toasts with olive oil and set aside.In a large bowl, combine the chopped tomatoes, avocado, onion, cilantro, lime juice, salt and pepper. Mix together gently making sure the avocado is well coated in the lime juice.

Spoon a portion of the mixture onto each of the garlic toasts and serve. Thanks Kelly Senyei from JustATaste for this recipe

Paleo friendly/ Gluten free Char siu (蜜汁叉烧, literally “fork burn/roast”) is a famous Chinese roast pork dish.

Hello LOVElies! For my #FlexbowlFridaySFlexBowl: Paleo Friendly/ Gluten free Char siu Chinese roasted pork with organic fresh greens, pineapples, and cucumbers.  You’ll Need:

  • 1 lb of pork cubes, pork shoulder, or pork belly
  • 2 tsp coconut oil
  • 2 tbsp honey
  • 2 tbsp gluten free hoisin sauce
  • 1 tbsp tamari or coconut aminos
  • 1 tbsp Chinese rose wine or Chinese cooking wine (brandy works too)
  • 1/2 tsp white pepper
  • 1/2 tsp Chinese five spice powder
  • 1/2 tsp sesame oil ten
  • 8-10″ bamboo skewers

Combine all of the ingredients except the pork and skewers in a saucepan. Heat on med/low for about five to ten minutes, stirring everything together until it thickens. Set it aside and allow it to cool. Cut the pork into chunks about 1″ in size.

Once the sauce is cool, put half of it in a gallon-sized ziploc bag with the pork pieces. Put the other half of the sauce in a container and then put both the pork and the sauce in the fridge overnight.

The next day, soak the bamboo skewers in cold water for 30 minutes, then skewer the pork chunks. Preheat the grill for about 10 minutes on med/high heat. Turn off the heat on one side of the grill, and place the skewers on the unheated side.

Grill using indirect heat for an hour, turning the skewers after 30 minutes. Your optimal grill temp should be around 250-300 degrees. During the last 30 minutes, take out your reserved char siu sauce and allow it to warm to room temperature.

Lastly, char the pork skewers on direct (medium) heat for a few minutes, brushing on the char siu sauce as it cooks. That’s it! Take the pork off the skewers and serve immediately. Thanks Domestic Man for this delicious recipe! Mmm YUM!!! See you on my next post!
